Extra-Crispy Spicy Fried Chicken with “Delta” Sauce

Ingredients
    For the chicken:
  • 3 eggs
  • 1/3 cup water
  • About 1 cup “Texas Pete” hot red pepper sauce
  • 4 cups flour
  • 2 teaspoon pepper
  • 2 teaspoon paprika
  • 3 teaspoons cayenne pepper
  • 1 quart buttermilk (optional)
  • Salt, Pepper, and Garlic Powder (to taste)
  • 1 (1 to 2 1/2-pound) chicken, cut into pieces
  • Peanut Oil, for frying
  • For the Delta Sauce:
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1/4 cup vegetable oil
  • 1/4 cup chili sauce
  • 1/4 cup ketchup
  • 1/2 teaspoon paprika
  • 1/2 teaspoon pepper
  • 1 teaspoon onion powder
  • 1/2 teaspoon prepared mustard
  • 1 teaspoon Worcestershire sauce
  • 2-3 dashes hot pepper sauce
  • 1 clove garlic, minced
